The parents of Achilles for starters. Zeus wanted to take thetis ... But a prophecy stated any child of thetis would surpass the father. So the gods did the pragmatic thing and married her off to a mortal, peleus king of the myrmidons.
Ariadne, a princess if crete. Dionysos (god of parties and wine) made her his wife.
In most cases of "elevation". It was usually to a low tier godhood and given a very specific role, or made into a constellation (ie when artemis made her very close friend orion into a constellation after his death)
