Cooking is one of my favorite hobbies and with the Covid-19 pandemic/ stay-at-home orders, I've been cooking a lot more. I suspect many of you may also have recently taken a stab at cooking a meal or three.

Excited to see some mouth watering recipes! Feel free to share something even if it's not a formal recipe. Maybe you prepare your chicken or toast in a basic way that you love. Share it with us and share as many recipes as you wish!

One of my favorites is a classic honey garlic salmon.

Ingredients
* Wild caught salmon fillet(s) - I prefer Costco of course
* Pink Himalayan sea salt
* Fresh ground black pepper
* 1 clove of garlic diced
* 1 tablespoon extra virgin olive oil
* 1 tablespoon honey
* 1 tablespoon water
* 1 teaspoon soy sauce
* A bit of lemon juice from a fresh lemon

Instructions
1. Preheat oven.
2. Season salmon with salt & pepper.
3. Pour olive oil into pan and saute the garlic for a minute. Add honey, water, and soy sauce. Add lemon juice and stir.
4. Add salmon to the pan and cook for 3 minutes or until golden. Baste juices on top. Season with salt & pepper.
5. Add lemon wedges around salmon and baste again. Place pan in oven for 5 minutes.

Mine isn't as good as yours and some may find it horried.

I like it so there. :P

2 slices of fresh thick light brown toast.
Enough cheese to cover 1 slice of toast.
Enough jam to cover the other slice of toast.
Put together jam to cheese.
Pop into microwave 1-30 seconds and no more.

Eat and enjoy.

Jam and Cheese maybe hot.

I have that 2-3 times a week with a nice cup of tea. ;)

Mmmmm! Yummy thread!

One of my absolute favourite Fall-time comfort foods is this butternut squash lasagna. It's a great spin on lasagna, is vegetarian, and is soooo cozy and autumnal :)

Butternut Squash Filling:

2 cups butternut squash puree (about half of squash)
1 cup ricotta cheese
1/2 cup milk or more, if needed
1/4 teaspoon salt plus 1/8 teaspoon more
1/4 teaspoon nutmeg

Spinach Filling:
8 oz spinach (1 cup cooked spinach)
1 cup ricotta cheese
1 cup mozzarella cheese
2 garlic cloves minced
1/4 teaspoon salt
pepper to taste

Other Ingredients:
10 oz lasagna noodles cooked (for gluten free, use Tinkyada brown rice lasagna noodles)
1 1/2 cups mozzarella cheese or more
1/2 cup Parmesan cheese on top
1/4 teaspoon Italian seasoning
1/4 teaspoon Paprika
1/4 teaspoon Basil

"Ingredients

That Salmon with olive oil, and lemon sounds amazing. I love salmon (raw and cooked).


My favorite recipe, and simple pasta dish that I commonly make:
- Linguine Pasta (boiled for 9 mins)
- Shrimp
- Olive Oil
- Pepper
-Parmesan Cheese (to top it off)

Sometimes I add red pepper. Sometimes I add a touch of teriyaki sauce in the shrimp while cooking it to "amp up" the flavor. :D

My coveted - and perfected! - homemade pizza dough recipe :D

Ingredients:

1 packet instant yeast
1 1/3 cups of room temperature water
1.5 tsp of sugar
1 tbsp of salt
3 1/2 to 4 cups of flour
One tall can of beer
3-4 tbsp of olive oil


Directions:

Pour 1 1/3 cups of room temperature water into a measuring cup, and at 0.5 tsp of sugar, and stir around.

Add 1-2 tbsp of the tall can of beer to the water. Reserve the rest for drinking ;)

Empty the packet of yeast into the water, stir gently, and then place a lid or towel over the measuring cup and let sit for 15 minutes, until it's heavily foamed up.

Next, in a large sized mixing bowl, combine 3 1/2 cups of flour, 1 tbsp of salt and 1 tsp of sugar and mix together.

Next, make a well/small dip in the middle of the mixing bowl and add in the water/yeast mixture.

With either a wooden spoon or a silicone spatula, work the dough while scraping flour off the sides of the bowl until it forms a wet but cohesive dough. Keeping adding flour until it's set enough that you can work it with your hands and it doesn't stick to them and leave residue.

Once you've worked the dough enough for it to become pliable with your hands and not stick to them, cut it into 3 equal sized pieces, shape them into rough balls, and then place each in a bowl that's been oiled, and cover with a towel.

Let rise for 1.5-2 hours, and then punch the dough down and cover again to let rest for another 1-1.5 hours.

For best results, place dough balls in a ziploc bag with a bit of oil and leave in the fridge for 24 hours to cold ferment, take out after 24 hours and let rise in an oiled bowl again for 2 hours.

Nick, you should try sour dough pizza crust.

One of my main go to recipes for taco night is what my family calls Icelandic or Viking tacos.

1 lb. ground lamb
chunked fried potatoes
rosemary
garlic
onion
flat bread
skyr, or you can use plain greek yogurt

brown your lamb with the rosemary, garlic, and onion. Then spoon into a warm flat bread, with the fried potatoes and top with a bit of skyr, or greek yogurt.

Moroccan-style Chicken in Honey & Orange Sauce

Serves: 6-8
Preparation time: 10 mins
Marinade: minimum 1 hr
Cooking time: 1 hr 30 mins

Ingredients

• Butter, salt and pepper
• 1 kg chicken breasts
• 0.6 l fresh orange juice
• 8 tbsps lemon juice
• 6 tbsps runny honey
• 2 onions
• 2 cloves of garlic
• 1 tsp turmeric
• 1 tsp ground ginger

Preparation

1. Cut the chicken into bite-sized pieces.
2. Peel and slice the onion
3. Peel and chop the garlic

Marinade

1. Place chicken in a large bowl, and add orange juice, lemon juice and honey.
2. Cover and leave to marinate for at least 1 hour, preferably overnight .

Method

1. Heat the butter in a frying pan, and add the onion and garlic. Fry on a low heat until the onions are clear and the garlic begins to give off its aroma.
2. Remove the meat from the marinade add to the frying pan. Fry until the chicken is tender.
3. Add the marinade to the frying pan, along with the turmeric and ginger. Season with salt and pepper.
4. Bring to the boil, cover, reduce heat and simmer for around 1 hour.
5. Thicken with flour, roux or cornstarch before serving if necessary.


Best served with rice or couscous.

This dish can be made using pork instead of chicken if preferred.
