Just made the above Rock Cakes.

Recipe from BBC website. (Not mine)

Ingredients.

225g/8oz self-raising flour
75g/2½oz caster sugar
1 tsp baking powder
125g/4½oz unsalted butter, cut into cubes
150g/5½oz dried fruit - I used dried cranberries instead.
1 free-range egg
1 tbsp milk
2 tsp vanilla extract

Method.

Preheat the oven to 180C/160C Fan/Gas 4 and line a baking tray with baking parchment.

Mix the flour, sugar and baking powder in a bowl and rub in the cubed butter until the mixture looks like breadcrumbs, then mix in the dried fruit.

In a clean bowl, beat the egg and milk together with the vanilla extract.

Add the egg mixture to the dry ingredients and stir with a spoon until the mixture just comes together as a thick, lumpy dough. Add a teaspoon more milk if you need it to make the mixture stick together.

Place golfball-sized spoons of the mixture onto the prepared baking tray. Leave space between them as they will flatten and spread out to double their size during baking.

Bake for 15–20 minutes, until golden-brown. Allow to cool for a couple of minutes, then turn them out onto a wire rack to cool.

Best eaten with a nice cup of tea. :P

Greek Lemony Potatoes

1.2 kg / 2.5lb potatoes , starchy
1 1/2 cups / 375 ml chicken stock/broth
1/2 cup / 125 ml olive oil
1/3 cup / 85 ml lemon juice
5 garlic cloves , minced
1 tbsp dried oregano
2 tsp salt

Preheat oven to 200C/390F (standard) or 180C/350F (fan).

Peel potatoes and cut large ones into thick wedges - about 3cm / 1.2" thick - and medium ones into 3

Place in a roasting pan with all the other ingredients. Toss well.

Roast for 20 minutes. Turn potatoes, roast for a further 25 to 30 minutes until the liquid is mostly absorbed by potatoes/evaporated and you're left with mainly oil in the pan.

To crisp the potatoes (optional): Transfer potatoes to a separate tray.

Tilt the original roasting pan and scoop off as much of the oil as you can (some juices is ok), then drizzle over the potatoes.

Transfer potatoes to oven and roast for 20 - 25 minutes, turning once or twice, until potatoes are golden and a bit crispy.

Return the pan with the garlic juices to the oven for the last 5 - 10 minutes or so to reduce down and make the garlic golden.

Transfer potatoes to serving platter. Drizzle over the reduced garlic pan juices (or toss potatoes in the pan). Serve, garnished with lemon wedges and oregano if desired.

Throughout 2020 I've been teaching myself to make new foods and the one thing I can't get right is cheesecake...

Been using Gousto (A site where you can order Recipe Boxes as and when you fancy, each having 4 recipes, that you choose from a selection, with the ingredients already in) the value for money is great and you get money off your first box too, here's some of what I have ordered that should be delivered soon.

(these are all ingredients for two servings, for each recipe)

Oven-Baked Cheesy Portobello Mushroom Risotto

2 Chinese rice wine (30ml)
300g portobello mushrooms
vegetable stock mix sachet (22g)
160g chestnut mushrooms
320g arborio rice
40g rocket
70g grated Italian hard cheese
2 leeks
2 garlic cloves
2 white wine vinegar sachet (15ml)

Orzo Primavera With Tenderstem, Spinach & Green Beans

2 bag of pine nuts
160g Tenderstem broccoli2 lemon
160g baby leaf spinach
vegetable stock mix sachet (22g)
70g grated Italian hard cheese
160g trimmed fine green beans
2 garlic clove
300g orzo pasta
butter
olive oil
pepper

Joe’s Popeye’s Chicken With Crispy Potatoes (Especially looking forward to this one, I guess it's named Popeye because of the Spinach)

500g cherry tomatoes
160g baby leaf spinach
1 soft cheese pot (100g)
2 white potato
chicken stock mix sachet (11g)
4 x 125g British chicken breast fillets
2 garlic clove
flour
olive oil
pepper
salt

the character limit won't let me fit all the steps in but it has them pretty detailed on the site anyway :)
200m Dunge, Rc, Mage and invention accomplished, + 120 Constitution/Slayer/Range/Summoning/Woodcutting/Mining/Defence/Strength and 110m fishing, got comp/MQC and 200m Fishing/Woodcutting/Mining as well as 120 herb/Farming/Cooking most 120s just Agility, Theiving, Hunter and Prayer left

Just made these Rice Crispy cakes.

Everyone has made them at some time. So easy to make.

1. Get some Rice Crispies.
2. Get bar or 2 of any Chocolate.
3. Melt.
4. Add to Rice Crispies and mix well.

Put into cake papers and decorate with what ever you have and cool in fridge.

Home made Ginger Cake.

I remember my Mam use to make this on a Saturday so it's ready for the Sunday tea treats. Was awesome then and I'm sure this is now.

260g Plain Flour
2 tbsp Ground Ginger
1 round tsp Ground Cinnamon
1/4 tsp Ground Nutmeg
115g Treacle
115g Golden Syrup
115g Muscovado Sugar
115g Butter
115 ml Water
2 Eggs
2 tbsp Milk
3/4 tsp Bicarbonate of Soda

Mix dry good.

Add wet goods to a pan and heat till melted.

Add wet goods to dry goods and mix well.

Add 2 eggs.

Add 2 tbs milk.

Mix some more and add to lined bread tin.

I used a 2lb loaf tin 21 x 10cm 7cm deep.

Cook for 70-75 mins at 150c or until done.

Enjoy.
