East/West Sliders
There is a range of almost 3 squares where the penguin can be in comparison to you whilst you are sliding it, this means you need to start moving at some point in a range of about 1.5 seconds, plenty of time.
You can start moving East as soon as the penguin has started moving from the square shown below. You will still be blocking the square you are on when you have almost completely left it, and due to WESN movement the penguin will not slip south through the existing gap in the line.
You need to start moving East before the penguin has chosen to move East from the square North of you, otherwise it will be able to pick directly SE for the next square.
You need to click when the penguin is 1 square further away from where you want to move, so when the penguin is on any one of these squares.
Notice the first square. The penguin is 1 North and THREE squares west of you.
Sliding from a Distance
If a penguin is some way from the straight you want to slide it along you can use the same West / East distance away from you regardless of how far North / South it is. You can start moving East (clicking to move 1 square earlier) if the penguin is on any of these spots. If it goes SE and you keep going, it will slide.
