Can anyone suggest a few good things? Preferably not ongoing.

Depends what you're looking for, genre wise... what you like and hate.

idek. I like almost everything as long it's not overly childish or ecchi filled (with the exception of high school of the dead).

Try Fate/Zero. It's mature, dialogue heavy and dark with decent action and impeccable characters. Make sure to only watch it on Animefreak though because there are two different types of subtitles and the one on Netflix and other sites are terrible. You will be lost and questioning the grammar constantly.

Idk how you still use animefreak. Kissanime all the way.
There's nothing stopping you and me from making all these memories.

So there are Start, beginning and end.

There is one series you should not watch. It's called Fate/stay Night. Just that. You should not watch that.

Start with Fate/Zero, As it's more from the beginning of everything.
Then Fate/Zero Season 2 (but it's actually Fate/Zero because it has 25 episodes and is divided in 2 for some reason)

After Fate/Zero, you should watch Fate/Stay night: Unlimited Blade Works (2 seasons aswell)

Alternate: You could watch the one I mentioned before, Fate/stay Night, but it's basicly the shit version of Unlimited Blade Works, as it's made in the early days and lacks alot of animations and more holes in the plot and so on.

So all in all.
Fate/zero
(The UBW Prologue)
Fate/stay night: Unlimited Blade Works
(The Movies, but you could skip them)

Fate/Zero is a prequel to Fate/Stay Night so naturally there will be spoilers to FSN if you watch it first. F/Z was created with the intention that you already know what happens in FSN so they don't explain things that are explained in FSN.

Fate/Stay Night has 3 parts, Fate, Unlimited Blade Works and Heaven's Feel. Only one of these has been adapted in anime form and that is Unlimited Blade Works. Heaven's Feel is supposed to be a movie series but there is no confirmed release date as of yet.

Since they aren't all readily available in anime form and I doubt you will want to read the Visual Novel, it's up to you on how you want to start since it won't matter in this situation.

a) Fate/Zero > Fate/Stay Night: Unlimited Blade Works (2014) > Heaven's Feel movies

b) Fate/Stay Night: Unlimited Blade Works (2014) > Heaven's Feel movies > Fate/Zero

c) Fate/Stay Night: Unlimited Blade Works (2014) > Fate/Zero > Heaven's Feel movies

Choice b isn't really an option unless you want to wait years for the movies to be made so that logically only leaves choice a or c.

There is no Fate adaptation and there probably never will be. The only way to experience it, is to read it.

As for spinoffs, they all take place in the same universe, so you can watch them if you want but I won't go into detail about them.
There's nothing stopping you and me from making all these memories.

DO NOT START WITH FATE/ZERO. Fate/Zero assumes you are watching it as a prequel and already know what is going to happen and reveals several things early on that are a big deal in Fate/Stay Night.

I would suggest:
Original Fate/Stay Night https://kissanime.to/Anime/Fate-stay-night
Fate/Stay Night Unlimited Blade Works https://kissanime.to/Anime/Fate-stay-night-2014
Fate/Zero https://kissanime.to/Anime/Fate-Zero
Fate/Stay Night Unlimited Blade Works Movie https://kissanime.to/Anime/Fate-stay-night-Unlimited-Blade-Works (It is literally all of UBW summed up in 1 movie and did so well that it inspired making UBW into a full season. This follows the Visual Novel very closely where as the season takes some liberties to string the series along nicer with future stuff. Also it is nice to see how everything played out again after watching the prequel where as watching UBW twice in a row would be kinda meh.)

Oh god please no. NEVER suggest someone to watch the original Fate/stay night or the UBW movie. As far as anyone is concerned, they don't exist.

I fucking loved the original fs/n and the movie. It was the only ubw we had at the time and it was like god shed a tear and it fell onto my soul. Also the original Archer vs Berserker fight was what created the term "Gar" meaning incredibly manly or badass on a whole nother level. It is a priceless piece of anime history.
