MLP as in My Little Pony? How can you even come close to comparing anything I listed to something like that? Apparently I have no idea how to discriminate and stereotype animes like is done by calling something Shounen, I just know what I like regardless of what stereotypical classification you would categorize it under.
I don't really see how anything I listed could be considered Shounen, since I would never let my kids watch something like Death Note until they was out of my house, thus adults lol. Who comes up with these stereotypical classifications? Obviously I would let them watch it being an anime nut myself, but lets say for the sake of argument that I would be a good parent and not let them :p
As for it being an age thing, I have been watching anime for like 16+ years (I'm in my mid 20's). I hardly think age has anything to do with anything.
Is MLP even considered an anime to begin with......
Just out of curiosity what animes would be considered these deeper more mature series? Since Revive claims I'm into "Shounen Trash," maybe I need to expand my "ego" a bit and watch these oh so deep animes you speak of, since I am apparently still watching things below my age group :P
I am going to go to bed tonight with dreams of butchering ponies now.....sigh....
Oh yeah on a side note I am liking Guilty Crown, but I am sure that is Shounen too so it must be shunned :D

You should watch Hunter x Hunter. Its demographic is shounen, it´s even published in Jump. But it´* executed like seinen. Especially the later arcs. (and especially a non-animated arc in the manga to which my name refers to).
There is a 1999 version that is imo the best version but with dated animation and an incomplete ending, and there's a new version that started last year, it's currently starting the third arc. First 3/5 eps (depends on the version) are meh though, and the 2011 version has a very annoying fanfare soundtrack but the music does improve later on.
*aside/ I'm beginning to think Togashi got some inspiration from Final Fantasy IX for the latest chapters. We all know he's a nolife gamer lol.
But you have watched a lot great series judging your list. Add Legend of the Galactic Heroes and Mushishi and catch up with One Piece :P and you're good to go.
What I would also call "deep" anime are the works of Kon Satoshi i.*:
Paprika <- inspiration for Inception
Paranoia Agent <-- especially this one
Millenium Actress
Perfect Blue
Tokyo Godfathers
Or less "deep" but must-watch are the works of Studio Ghibli, especially those Hayao Miyazaki is involved with.
And if you wanna satisfy a large group of people here, watch Angel Beats. But I find it VERY overrated.

Well I watched the first episode of Angel Beats since I keep hearing about it so much and I don't think I have been more confused in an anime lol. The confusion has me wondering wt* is actually going on so I guess I will have to keep watching it.
I will check out the other anime's you mentioned when I get up, it's 5:54 am and I have been watching animes all day, haven't even logged into RS except for a herb run every now and then :o Anyway, nightz :p

Not much to be confused about really. Yuri gives some pretty good advice right at the beginning which Ive often gotten the impression was intended for not just Otonashi, but the viewers as well:
'Try to be more flexible, just accept things as they are'.
Of course, that line of thinking has its own flaws. Wont say what they are because that would be a massive spoiler, but when you think about it in hindsight its rather funny.

@Zaraki- I don't know how you misconstrued my message as comparing MLP to a Shounen anime, as it's logically impossible, it was just a side message that I put in there. I haven't seen Guilty Crown yet, but I've heard good things about it, so I'll probably watch it eventually. Also, I've heard of people being confused by Angel Beats, it just takes time.
Edit: Looking at your list, the only 2 I recognize as being really good are Elfen Lied and Evangelion, so I'd have to agree with Revive that you're mostly a shounen anime kinda person. I'm not sure how to describe the type that is deep and more mature, but I'll get some more examples up later of what I think is pretty note worthy.
@Revive- I know, I'm not crazy about that part either, but his Brain Burst avatar looks pretty bad ass, so I guess that's why I can look past the short and fat part.
