A few notes.. with multiple offers that are the same price, they will not buy/sell in the manner listed.
Your example:
Offers also overflow into each other. If the older offer is selling 8 swords, and the newer offer is selling 3 swords, and someone buys 10, the old offer will complete and the remaining 2 will come from the newer one.

In most cases, it will be 7/3 not 8/2. It is not directly overflow related, and can be easily understood by relating it to (charm?) drops. There is say, 75% of getting a gold, 25% green if the offers are equal. Green is the offer put in later, gold the offer put in earlier. The gold will sell more, but the green will still sell some.

Also, med price is more complicated than you have led to believe.
The 7 day, and 30 day averages both play part in the calculation of this, having a rather substantial weight in the price.
Some items are updated by a small percentage even when prices are changed greatly. This is because of the averages.

How rarely items can be updated, leaving an extremely inaccurate mid price, might also be worth mentioning in this part.

Thanks for your comments! I'll update the posts on the med price and old/new offers. I didn't know that the averages were taken into consideration for med prices, but this does make sense based on my experience.
