I watched what was supposed to be a simple way to tackle the fight but it was ridiculously complicated, "just remember these hundred tips and you'll be fine"

I'm going to attempt the new quest soon and dreading the boss fight, I really wish they'd make the quest version of Rasial a bit more accessible for us non-bossers.

I'm with you 100%. I was putting it off until I'd managed to make tier 90 tank armour..I've got that now but I find myself finding other reasons not to do the quest. Waiting until I have more practice using necromancy in combat and I have another talent point to unlock split soul.
In the meantime the game message about the quest being available

I'm the world's worst at bossing and I only have T80 Necromancy gear but somehow I did it.
Took two goes as I was unprepared the first time, I only meant to kill Hermod then restock before Rasial but I died.
Second time however; full invent of Rocktails, BoB full of same, two Overloads, two Super restores, Vampirism aura and scrimshaw.
I even had 15 Rocktails left over.
I had no idea what I was doing during the last phase but I kept moving and spamming "E" on my keyboard (I have it mapped to the "Eat Food" ability) and somehow I got away with it
When the cutscene arrived I thought I'd just died again, so it was a pleasant surprise to see Rasial talking to me.

I tried Rasial today and got him to the last phase but I died. I must use the key binds next time and not rely on mouse clicks to eat food.
edit to add: Is it possible to kill Hermod then leave to restock?

going off what others have said since i did it in one go, those that have killed hermod then died during raisal have returned to begin the fight directly with raisal skipping the hermod part

Yes, pretty sure you can.
After I died the first time I just went straight into the Rasial fight when I went back.
I'd take a one click tele as Rasial appeared quickly .
