We do not know for certain what started the second age. It likely was Guthix falling asleep however it could be any number of events. It cannot however be Zaros' arrival since he arrived and found gods who arrived for certain in the second age such as Saradomin fighting over land.

Hmm, Balustan, what's the source on Saradomin coming in the Second Age, then?
I have mo idea what the source for this was. A J Mod a very long time ago long before the 6th age no doubt.

I don't think it did. Particularly since he arrived, saw it, left for several years and returned with part of his demonic forces. Also Mod Jack has Zaros arrive sometime into the second age and the last to set up his Empire.
If you can't state a source for sure, there is a possibility you could be wrong, right? In which case it could be that Zaros's arrival was what started the Second Age.
Edit: Ah, now I've read what you said about Mod Jack. Hmm, what did Mod Jack actually say?

I respectfully disagree, the arrival of Zaros changed everything, from the scale of Empires to the map of Gielinor itself, his influence as recorded in the Seren section of the book of the gods alludes to this.
Whatever my goddess's intentions, they were set aside when a great emptiness fell upon this world. It spread like a blight across the land.
His presence was even felt in Tirannwn, his influence would have reverberated across the world.
I also assumed First age ended when Guthix slept but if there is something stated otherwise, i would love to hear it.
As for gods evading Guthix notice in the first age, didn't in one of the podcast it mention that it was possible Brassica Prime avoided notice? I'm not sure though...

The Second Age began when Guthix went into his first slumber. That's gotta be in some quest somewhere...
We should all start keeping track of sources for important information like this more often
