Stuff we would have as of August 2007: Godwars Dungeon. Dragonfire shields. Implings. Pest Control nerf. Dark bows. Varrock graphics update. Wilderness ditch. Barbarian assault. Tutorial island.

Things we would not have: Summoning. Dungeoneering. The Grand Exchange. The trade limits. The Wilderness removal. Tradable Law Talismans. Smoking Kills and Slayer points. PvP worlds. Resting. Dragon pickaxes and handcannons. Multi-rune crafting. Extremes/overloads. Just another old-timer.

I am very excited over the prospect of a Runescape with no EoC!

From the posts I've read, I see there are a few who are a bit disgruntled over those who don't prefer EoC possibly being able to play a version of the game that they do prefer. I don't understand why anyone would want to derail the possibility of a version with the 2007 game. The initial post by Jagex said they would continue with the post-EoC version, and it would not be affected by a 2007 version since they would hire a new team for it (paid for by membership fees for the 2007 version). It doesn't make sense to me that anyone would get upset over it. If you don't want it, then don't play it! It's that simple.
