Even though they are somewhat the same story (up to some point at least), they feel kind of different, and which one you'll enjoy more will depend on you, really.
The 2003 FMA is generally considered to be more mature, serious and dramatic. FMAB is more "shounen-like" (including more action and "comedy" ), the animation is better and the plot is usually considered to be better structured. More attention is given to more characters too.
Personally, I liked both. I preferred the tone of the 2003 version and some aspects of character development, but I sometimes I didn't like where the story went, particularly towards the end. The beginning of FMAB was kind of rushed and made me feel like it somewhat assumed we already knew the story (I had already watched the 2003 version when I started FMAB so I don't know how it would feel for someone who hadn't), but apart from that I think I preferred FMAB's plot (when looking as a whole), plus it was fun to see other and new characters get more attention.
In general, I think there are more people who enjoy FMAB more, but there are quite a few people who prefer 2003 FMA (specially older fans and people who usually don't like shounen that much).
With all that said, it's up to you! If you have the time, you might as well watch both and decide for yourself what you prefer
if your personal preferences do not really affect that choice and time is an issue, I'd probably recommend only FMAB too, just because more people prefer it.

Knowing me, I'll probably end up watching both eventually.
