Fixed a lovely grilled salmon with a maytag blue cheese tart last night for supper. Here is the tart recipie.
PIE CRUST
1 1/3 c all purpose flour
1 Tbsp sugar
1/4 tsp kosher salt
1/4 c shortening, chilled and cubed
1/4 c unsalted butter, chilled and cubed
1 large egg
1 1/2 Tbsp or more ice water
FILLING
1/4 c sour cream
1/4 c heavy cream
4 oz maytag blue cheese, crumbled
1 large egg
1 large egg yolk
2/3 c walnuts, chopped
Combine flour, sugar and salt in a food processor. Add shortening and butter and pulse until the mixture resembles coarse meal. Beat egg with the water in a small bowl. Add to flour mixture and process until the mixture begins to form a a ball, adding additional water if needed.
Shape into a ball and wrap in plastic wrap. Chill for 1-24 hours.
Preheat oven to 400-degrees. Let pastry stand at room temperature for 10-15 minutes. Press into a 9 inch tart pan and prick sides and bottom with a fork. Bake for 15 minutes or just until golden brown. Cool on a wire rack. Reduce the oven temperature to 375-degrees.
Filling:
Combine the sour cream and heavy cream in a food processor bowl and mix until smooth. Add blue cheese and eggs and process until smooth. Spoon filling into tart shell and sprinkle with walnuts. Bake for 20 minutes or until the filling is golden brown. Cool for 10 minutes
