I support, and also you mentioned a carcass. Say you have a cow carcass, the type of meat you get from it should be of your choice. You might want to get ribs, or maybe a new york steak. Some would take longer than others and would give more exp. than others. Or the type you get could be random, kind of like granite. You can get 250g or 500g, and something else which I don't remember. But you would get maybe a certain weight of meat or like I said before different types of meat. This would make it a bit more entertaining.

I figured the results of butchering a carcass would completely depend on your Butchery level.
And a couple things would come into play when butchering a carcass;
The higher your butchery level the better quality or variety of meats you could choose from, the higher the butchery level the more cuts you will successfully achieve (like cutting some gems, sometimes you fail and ruin the cut ending up with.... hamburger?), and also the higher your butchery level the better butchers knifes you can use, also influencing the results of your cut.
And as I have mention previously, with butchers shops located around Runescape where you can take your carcasses to process, rather than just doing this in the field of battle, your chances of getting more cuts increases. And also I would want to create a butchery room in my POH with the best table, knives, saws, etc to get the best from every carcass.

What if you're a high Butchery level but you want the worst meat you can get from a cow. If it is random and the higher your level you would most likely never get that meat. You should get to choose which one you want, or make it completely random but say you're using a better knife it could increase your chances of obtaining a certain meat or give you more options to be able to cut more types.

^ I never meant to say anything to suggest the choices of what you wanted should be random. I did say:
"The higher your butchery level the better quality or variety of meats you could choose from"
Just like any other skill you would get to choose from all that was made available to you by increasing your level.
And yes, as you progress to higher levels the likelihood that you will get more cuts from a particular carcass would increase.
Just my opinion and what I would like to see.

If this was introduced it wouldn't be as a new skill. It would have to be added to cooking. Plus it would make some things too hard, for example scaling and filleting a fish just so you can cook it, the same with plucking a chicken etc.
It could however act as another form of herblore ingredient/summoning ingredient.
If fused with cooking however it would work because-
-cooking experience would be gained from both preparing and cooking.
-players wouldn't have to mess around with another skill just so they can cook.

It's kind of similar to the herblore idea-
clean herbs>make pots as opposed to butcher prey-cook food
You have a great idea. But not as another skill.
