My personal favourites include:
Zaros Zeitgeist (hard to unlock, need to ENTER nex's lair, not just the Ancient Prison,)

Adorno VIII
Others include:

Animal Apogee and Dungeoneering music of course, especially Har'lakk the Riftsplitter.
Still, the "rest music" definitely needs to be updated. I quite liked it when I first heard it, but it seems to be the same tune playing across 90% of RS, and that needs to be changed.

Old songs, like Harmony, Newbie Melody, Flute Salad, etc. but my absolute favorite is Barking Mad, from the Wolf Skullball (is that what it's called?) Agility "course".
The old login music (back when the login screen was gray cement with two candles which burned in the shapes of runes) needs to come back, seriously.
Oh, and though not Runescape music, the "Chocolate" song for Bric-a-Brac on Funorb is awesome.
