We can set the seasons manually to farm seasonal sheep versions but the night one is a huge problem.

I guess it depends on what you consider night to be, but from here I can't even visit my farm during peak hours or my progress can be wasted on the wrong sheep. The action seems to take place upon arrival at the farm, so some players can't even go to their farm at all. I realized the other day I missed the mark by 10 minutes. Not ideal.

Night should be a setting just like the others. Farming sheep ain't easy and this seems unfair regionally.

I guess, they could add another machine for that. Improvements: Tooltip / (F2P) QoL v2

I'm in the opposite boat from you, in that I normally check my POF right after reset so it's always at night - I agree, having the ability to set day/night would be nice :-)
