Going to a school becoming a Physicist Myself, our class understands a lot about Albert Einstein. The truth is, he probably didn't say anything, the nurse was requested to bring him pencil and paper just hours before his death, he said he discovered the secret of the universe, and later died. I will be working on his greatest work, the Unified Field theory. Now, if he did discover the secret of the universe, I don't believe thats what he said in German, he would have requested it wrote down, after all this theory has been active for over 70 years.
If he said anything at all, it was either a religious prayer, seeing he was Jewish, or seeing as he was such a playful, joyful individual he said something just so we could ponder about it, afterall he said "The important thing is to never stop questioning". Overall, I don't believe he said anything.
