I though about my character and decided to go against my monk idea. Instead I am going be doing a disgraced nobleman. One who joins a mercenary company, not for money, but for death honorable battle. One who is arrogant and annoyingly shouts out," Take that, Peasant!" to each man he kills, regardless of whether he is a peasant or not.

Not overpowered, no, but you'll definitely stand out - no one has else in the company has a horse (unless other RPers choose to give their character one.) Just a few mules to carry provisions.

I get the feeling the aspects will hate my character even if he doesn't tie enemy souls to his equipment, given his intention to become immortal. (By finding a better way than becoming undead, enslaved or fucked over by some malevolent force)

That seems like a good goal. There are definitely other ways to gather dark power. Sacrificing the local Priestess of Klora to a dark god just happens to be one of the easier routes. Good on you for not taking shortcuts.
But if you found a way to gain immortality that doesn't hurt anyone, most of the Aspects will be fine with it. So long as you don't start calling yourself a god. Or act like one.
