Summoning and Hunter were mentioned in the past - the former would need a bit of clean-up with the existing pouches (re-fitting levels), the latter should rather try and make use of 99 levels first, before even thinking of a level 120 extension - we don't need more skills like slayer, dungeoneering or invention, that perfectly could've stayed in the level 99 scope.
Mining and smithing were considered as potential candidates along with the rework, but are currently somehow useless for purposes other than tool creation. Unless they start with mess-ups like pre-rework runite.
Personally I think support skills would be the easiest to extent. Thieving would be fairly straight forward, agility would be better if they used that energy on making those tons over tons of irrelevant courses relevant first. And if it's just like OS ape atoll with an exclusive cosmetic for doing it - there already are too many courses to have all of them being viable skilling methods - even if they were re-shuffle the levels used for and rebalancing the xp rates.

Farming and Herblore also are good templates - especially when talking about an extension - they already made fairly great use of 99 levels and they offer something (and even if it's just a passive upgrade to something) for each level past 100, while also introducing a couple of things for lower levels (like the cooking potion or some of the PoF2 animals).
