Maybe for armour, if it takes an age, just siphon at any level you can? Maybe get 10 on weaps, 5 on your armour, just siphon as you go? Or will you get considerably less exp doing that as it doesn't maybe go up by 'stages', so like if gear gives 270k siphon exp at level 10, doesnt it give you half that at level 5?

Depends on the price of siphons. Siphons are more expensive than GWD gear at the moment so you'd be better off disassembling your GWD armor than you would be for siphoning it for half exp.

Yes. Siphons are consumed when you use them.
