Can I ask, are there normally any bossing events based around in europe time in the morning/evening?

Was having a look at the current list now and saw Mod Lee hosting some but they are based around USA time. Would love to attend these bosses on my main but wont be able to make the ones Mod Lee is hosting since it'll be midnight'ish here and will have to sleep for University/Work.

Yes, normally once a week there is a boss around European time (Jagex time :P ), Mod Lee does the late-night shift for the US most of the time :) . If you keep looking you'll find them sooner than later in the following weeks. :)

Should be able to attend some, after many weeks/months doing these it has come to my attention PvM is not for me unless it's easy to get too lol.

I'll be at hopefully Mondays, maybe Wednesdays and I think Thursdays hide 'n' seek as well as Fridays Trouble Brewing.
