I wouldn't call it brainwashing, it's just training.

If you trained a bull you could ride it (just Google "can you ride a bull&quot ;) ... but horses are better for riding because they're generally more docile and better physically suited to the task.

In times past, maybe even currently, many different animals were used, often as a novelty, to perform certain tasks, horses are not unique in complying with human interaction.
Ostriches can be trained to be ridden, so can Giraffes, Zebras, Elephants etc.
Other animals have been used to pull carriages, Hippopotamus, Goats, Dogs, Pigs, Turkeys etc.

It is not by any means "Brain Washing" but more a positive interaction with benefits. Some animals love to engage in these activities and comply enthusiastically.

This ceremonial saddle suggests that unicorns were at least sometimes ridden. It seems unlikely that the icyene would use them as mounts, nor centaurs or lions, so it remains a mystery as to who might have done so.

Any animal can be trained to do tasks, it all depends on the complexity of the task and if the brain has evolved enough to understand the task.

Rats and mice can be trained to do tasks they would normally do in the wild. The only difference is teaching them to do it on command.

Higher evolved animals can be taught tasks that they wouldn't normally do in the wild. I saw a video about unusual tasks animals were trained to do. On one video, the owner was sitting on the couch and told his German Shepard to get him a beer. The dog went into the kitchen, opened the refrigerator door, grabbed a beer, closed the door and took the beer to his owner without piercing the can.

It all depends on how far the animal's brain has evolved and how much patience and perseverance the trainer has without getting abusive.
