I've trained horses before. Here's how we are able to control them. Lot's of ground work.
1. Let them get used to you.
2. Bond with them by brushing them and being around them and talking to them.
3. RUN them around the round pen in various directions, but don't instill fear into them by putting a whip on them, spin a rope in a circular motion whilst pointing.
4. While in the pen try and get the saddle on the horse, if the animal wants to fight vocalize a strong loud command and get them to run the pen more, establish dominance.
5. Try #4 again. When the saddle is on run them in the round pen more.
6. Desensitize the horse - add weight, make lot's of noise, etc. until the critter is accustomed to those things.
7. Saddle up, but your left foot in the stirrup on the left side of the horse while grabbing the saddle seat and push off of the ground while pulling yourself up and throw your right leg over.
8. Grab the reigns keeping your hands in front of the saddle horn and squeeze your legs while clicking with your tongue to go forward. To get the horse to turn right put pressure on the horses /left/ side using your left leg while lessening pressure with your right leg and tug the reigns gently to the right. To go left do the opposite. For a stop say "WOAH" while pulling back. If the horse wants to be moody and crow hop ride it out until the horse chills out then run it in the pen again.
The above is the method another guy and myself used to train a horse.
Also I'd suggest for the tack getting a tie down which connects the halter to the breast collar so the horse can't reach around and bite or try to throw you. If you're a green rider I wouldn't recommend trying to train the horse yourself, get someone who does it professionally or the horse will pick up bad habits. Also breaks + rewards go a long way in training, don't want to have a horse that hates you or has a broken spirit.
