made a batch of fresh skyr yesterday, which is something I have not did in a while. Don't ever think the reason I am peaceful is because I do not know how to be violent.

I've been away for a few days and eating in restaurants so I wanted something simple to eat when we got home. For dinner tonight I had a jacket potato with grated extra mature cheddar cheese. Yummy!

My husband makes a delicious broccoli and Stilton soup. He makes the vegetable soup with plenty of broccoli in it and puts it through a blender then we freeze any excess. The Stilton cheese is crumbled in to it and gently reheated to melt the cheese. Cream can also be added but isn't essential. I like to add some more crumbled Stilton to my bowl of soup. Its even more delicious eaten with crusty bread.

Last night I had 3 different cheeses because we had home made lasagne. Its a recipe given to me by someone I used to work with and her parents came from northern Italy. It doesn't have white bechamel sauce but has 3 cheeses and a beaten egg instead. The cheeses used are mozzarella, ricotta and parmesan. Its absolutely delicious and I cannot eat a lasagne in a restaurant since I had that version.
