Hi. I don't want to be a full on vegetarian but I would like to eat vegetarian about 2 times a week, but I don't know many recipes.

As I have said on an other thread I like to make Mac and Cheese, and I make a mean Egg Curry and Rice.

Also the price of food that is good for you like greens has gone up a lot lately. But that shouldn't stop me buying fresh veges etc, I just don't know what to buy.

What vegetarian meals do you guys eat?

-Hummus with falafel and bread.
-Lentil soup with toasted bread.
-Mixed veggies with olive oil.
-Ewedu soup with rice,lemon,fried almonds.
- Yellow rice with fried cauliflower, and this red powder..forgot the name.it's not chili..now I rememberrrrrr..it's called sumac.

But these are once in a blue moon(years ago). I don't '' make '' meals. I consider cereal a meal for me which I guess is also vegetarian :P

And yea, mac N cheese i s delicious! Egg curry rice sounds pretty yummy too!

I'd like to be vegetarian too one day. There are substitutes for meat available. I remember KFC had these vegeterian/vegan nuggets at a time.

I'm similar, I'm not 'vegetarian' but my diet is certainly more vegi than it is carnivore. 1:4
There are a lot of good 'bean' products out there, bean burgers are great.
Quorn can be hit-or-miss I find, but it's all subjective...

Anything can be made to taste better with lots of cheese, haha.

When my youngest son and his family come to stay I'll often substitute quorn mince for minced beef/lamb in recipes. I make sure to use vegetable stock and if cheese is used that its vegetarian. Job done!
edit to add: my son also uses green lentils or various tinned beans ( eg flageolet ) to replace meat in recipes. Dried beans can also be used but they are best pre soaked and take longer to cook.

Nice options right there. I like to mix Hummus with Pita Bread and add some lettuce, black olives and some Sriracha sauce.

Also, I'm not an estrict vegetarian, but if you like Quinoa... there's a HUGE selection of products nowadays made out of this ingredient, including second dishes (the other day I ate a veggie burger made of quinoa) or breakfast options as cereal or even base for smoothies and shakes. Watch out, though: some products have lots of sugar. I don't know how people like those extra-glucosey-syrupity smoothies, with all due respect.

One product I buy regularly is "Mister Natural Peanut Butter" (I live in Spain so maybe the name changes in other countries), which has no sugar added, no extra fats, nice texture and fair price. Also contains 7 gr (0.2 oz) of vegan protein per serving (30 gr or 1.05 oz), which is pretty good. One or two spoons in the morning and you're ready :P

Like you said, the price of veggie foods have raised since many have somewhat a good quality standard including organic ingredients. Due to its origin, some have the Kosher-Pareve label (jewish seal of approval), which usually is a sign that the food was rigurously reviewed. Not in all cases: there's this Obela Hummus which is tasty but it's packed with lots of fat and it has the KP label.

I couldn't become a full vegetarian not a chance.

I do how ever eat a lot of veg and often make soup. I love most homemade soup except MUSHROOM. Can't stand them. Yukky.

To have 1 - 2 meals per week just a veg soup or a meatless meal is good I think for my aging body.

When I make soup I often make way too much lol. So I freeze it for another day.

Over the next few days I'm making more soup. I now have a stock of tubs with lids that are safe for the freezer. Now I can make a huge batch and fill up the 10 x 2pint tubs with nice tight fitting lids. Safe for microwave too which helps.

Can't wait. Just not sure what soup to make. So much choice really and no meat. I can't wait.....

1 soup for sure is Carrot and Corriander. I love that combo.

Another Carrot and Parsnip. Love that too.

I can't see me making any more tomato as I have 4 tubs left from last time.

Could be a bad time of year for soup lol. Summer is arriving.

Maybe a gazpacho. Thats good for Summer. I've added Gordon Ramsey's recipie below. Looks yummy. I could have sworn while He was making it I could smell it lol.
