My favourite homemade soups are leek & potato and broccoli & stilton. We freeze the broccoli and stilton before the stilton is added. I've had to stop my husband putting carrots in every soup he makes because that tends to make them taste very similar...he was adding a lot of carrots. We don't stick to an exact recipe for the base soup but broccoli & stilton will have a lot of broccoli and the leek & potato will have lots of leek and a good amount of potato.
edit to add: stilton is suitable for vegetarians

I believe that is a really good recipe. I have made it before but I like a lot of chilli in it.

edit to add: my son also uses green lentils or various tinned beans ( eg flageolet ) to replace meat in recipes. Dried beans can also be used but they are best pre soaked and take longer to cook.

Thats a good idea Megycal, Anything to get them to like vege meals.

They are both vegetarian, my son has been for several years, my daughter-in-law all her life. I have to adapt to suit them. Sometimes I'll cook 2 versions of the recipe, meat for us and a substitute for them. I also get them to help with the cooking. I'm sure their baby son will be brought up vegetarian too.

Veggie Stir-Fry

Ingredients:

1 cup broccoli florets
1 cup sliced bell peppers
1 cup sliced mushrooms
1/2 cup sliced onion
2 cloves garlic, minced
1 tbsp soy sauce
1 tbsp hoisin sauce
1 tbsp cornstarch
1/4 cup vegetable broth
2 tbsp vegetable oil
Noodles/Rice

Instructions:

- In a small bowl, whisk together the soy sauce, hoisin sauce, cornstarch, and vegetable broth. Set aside.

- In a wok or large skillet, heat the vegetable oil over high heat.

- Add the broccoli, bell peppers, mushrooms, onion, and garlic. Stir-fry for 3-4 minutes, until vegetables are tender-crisp.

- Pour the sauce over the vegetables and stir-fry for another 1-2 minutes, until sauce has thickened.

- Serve with rice or noodles. :)
