I found this recipe on YouTube that looks pretty good, and it seems really simple:

3 ingredients dessert in 5 minutes! with no sugar ,no gelatin, no oven !! enjoy it guilt- free!

ingredients :

5-6 medium oranges ( 2 +1/2 cups of orange juice (600ml))
2-3 tbsp of honey (depends on the oranges sweetness)
1/2 cup of cornstarch (65g)


for garnish (optional):
some desiccated coconut
candied cherries and mint leaves

The recipe does call for honey, however it can easily be replaced with alternatives such as sugar, stevia, or even maple syrup. The method can also be easily adapted to make other desserts, such as swapping the orange juice for apple juice, or thick apple cider, using maple syrup as the sweetener, and some sugar and cinnamon dusting for the garnish.

Mujadara- had this today and I remembered this thread . 100% vegetarian. From what I could tell it consisted of rice,caramalized onions,lentils,. It’s really yummy and topped it off with yoghurt. Filling too!

INGREDIENTS
* 4 medium cloves garlic, smashed and peeled
* 2 bay leaves
* 1 tablespoon ground cumin
* 1 ¾ teaspoons fine sea salt, divided
* Freshly ground black pepper
* 5 cups water
* 1 cup brown* basmati rice (regular, not quick-cooking), rinsed and drained
* 1 cup regular brown or green lentils**, picked over for debris, rinsed and drained
* ⅓ cup extra-virgin olive oil
* 2 medium-to-large yellow onions, halved and thinly sliced
* ½ cup thinly sliced green onions (from 1 bunch), divided
* ½ cup chopped fresh cilantro or flat-leaf parsley, divided
* Plain whole-milk or Greek yogurt, for serving
* Spicy sauce, for serving (optional): shatta or zhoug or store-bought chili-garlic sauce or even sriracha

I have a vegetarian best friend lol she made me a tofu smoothies once. I was hesitant to try it at first but they are actually very delicious!

I really like black bean soup a lot the kind with tex mex in it.

Pizzas like margherita pizza or a spinach and feta pizza, or a pesto one.

Vegan ramens are awesome. Sometimes vegetarian pho but depends on the place (I hate the places that use sweet carrot broth so weird in a savory soup but onion or mushroom broth is great)

This one might sound weird... some people either really like it... or they really hate it. Salad with chopped green olives. Chopped green olives are mixed with olive juice and lemon juice (about 50/50 is right although I usually put a little more olive juice in it) then you can mix it with olive oil, but olive oil is easy to put too much into it so I normally only do a few spoonful of it. Great with cracked black pepper over it. If it's too oily you can save it with some sliced tomatoes although I personally don't like tomatoes.

Similarly like a salad dress that is mostly mayo plus some mustard and hot sauce in it.

I like broccoli, potatoes, corgettes/zuchinni a lot. Doesn't have to be fancy.

Speaking of broccoli and earlier cauliflower... I had one place make mix broccoli, cauliflower, and feta cubes. They put a little lemon and olive oil, and some minced garlic... surprisingly crazy good.

A mexican dish called chile relleno most places I go to have the salsa covered one although I've had some covered in creme and it's so good. Really good places use queso seco (dry cheese) although I've only ever had that homemade.

Most breakfasts are pretty awesome like pancakes/crepes (and I mean the savory stuff not the sweet sugar covered ones) and you can have it with eggs; I also like rice with my breakfast and if the eggs are over easy i'll break the yolks on the rice and pancakes.

I saw someone already mention hummus, and I love having a hummus sandwich. Yummy. Mine will have feta, mustard, mayo, pickles, red onions, and lots of lettuce.

Tomato bisque/soup but watch out some places add meaty broths to it.

I like the sound of most of your suggestions like salad with chopped olives and lemon juice and with mayo if you like.

Also I like hummus. My partner and I used to make it from scratch because it was so much better than the tubs you buy in the supermarket.

I need to eat more of that type of food.
