Japanese animation (anime): Kenshin Himura from Rurouni Kenshin. He is just such an outstanding character. Polite, respectful, genuinely does the right thing for the right reasons. He's mature and experienced. Classic white-knight who trolls can't bait.
Western-kinda-anime: Uncle Iroh from Avatar: The Last Airbender. I'd die to visit the Jasmine Dragon and drink tea with this guy. Good heart. Good humor. Good tea.
Video-games: (They count!!!) Link (OoT). Let's just say I had a childhood obsession with pretending to be Princess Zelda... XD

Do you like Samurai X?
I've seen the Samurai X OVAs and I liked them. It's been a long time since I've seen them. I might have to rewatch it all.

Oh yeah, they're definitely worth the watch. They continue where the manga series left-off in the Kyoto Arc when the TV anime series had to deviate with filler because it caught-up to the manga. I believe there was also a recent redo of the Kyoto Arc in the past few years just called the New Kyoto Arc.
The live-action Japanese film series was also pretty good (there were 3 films). The choreography was amazing, but did get corny at times when they had to show special warrior's signature techniques (like Sojiro's tenken).

Well, it's all technically Rurouni Kenshin -- the original manga series by Nobuhiro Watsuki. The live-action films are based on Watsuki's original work for the most part but doesn't follow the Kyoto Arc 100% but I don't think it needed to -- it captured the essence of the series exceptionally well as far as I'm concerned.
