Don't eat raw meat. It's common sense. It's not about taste, it's about health. We know that bacteria, parasites and other nasty things can hide on or inside raw meat, and cooking the meat kills the majority of these and keeps them from invading our bodies.
For things like steak, properly handled, you generally only need to cook the outside, and can leave the center rare. However, with the advances in meat glue these days, what you perceive to be the center of the steak, may not actually be the center of the meat, thus, you should always try to properly cook your meats. I'm better than you, but that doesn't mean you're not great!
