I work at a butcher shop and people who say that the marrow enhances the flavor of the meat drive me up the wall. Sure, it does depending on your tastes marginally so around the area of the bone. It's always people complaining when certain cuts have been deboned, too. Then when we do have the cut they are looking for with a bone in it they complain when we charge them for the bone. I can remove the bone, but then you wouldn't be getting a bone in ribeye. Then they complain when I can't put the bone back in, because I had to cut the bone out or use the band saw to cut through the bone.
It's a catch 22 when it comes to people and bones in their meat.
