As far as newer animes go:
-I just got done watching Dororo, and it's quite an amazing series through and through. Loved every single episode!
-Currently watching Kimetsu no Yaiba as an ongoing anime. There's a few uneventful episodes, but the story is compelling and the animation is
amazing
.
-Rising of the Shield Hero is absolutely amazing, and you fall in love with the protagonists.
-The 2nd season of One Punch Man was somewhat of a disaster and ended seemingly abruptly, and didn't have any sliver of a "finale" episode to wrap up a season.
I could go into further detail as to why I feel the way about each anime, but I would probably take up all 2,000 characters for each individual anime.

It's a jab at the authours choice in how to go about things.

In short, they beat the final boss and the MC decides to go the madokami route and make herself this omniescent entiny in order to prevent the whole series of events from happening.
