There are some that ended up good. I mean, look at Higurashi.
The problem with most VN adaptations though, is that very few of the ones adapted are Kinetic Novels, and as such they can only choose one route to go with. Often times, they can't even manage to stick to a single route, and create a mash up of multiple routes, leading to the disasters like Rewrite.

I feel they try to cram far too much into as little episodes as possible too. They shouldn't really be trying to adapt long visual novels if they don't have the budget to support it.
So the two series I was watching this season, Magical Girl Raising Project, and WWW.Working. Have to say, both had extremely satisfactory endings. Definitely worth the watch.

The ending of Magical Girl Raising Project isn't what you'd call "happy", but it is definitely satisfactory. It's on of those, "You have to watch it to get it", as if I tried explaining it, I'd be posting full spoilers for the entire season.
As for Working, the original animated series had three seasons, as well as a closing hour long special which aired about three months after the third season ended. with it having an actual true ending.
WWW.Working is based on the web comic that the original animated series sprung from, so could be seen as more of a side story. Different branch of the chain restrurant (can't spell the word for the life of me today) Wagnaria, different characters. It's faster paced than the original animated series, but is still a lot of fun.
