Been working on my pizza dough recipe a lot lately and FINALLY think I've gotten it to the point where I'm completely happy with it.
This was made 2 days ago and then cold fermented in the fridge for 24 hours, and then was made last night. Came out perfect - just the right amount of chewy and crunchy!
Tomorrow I'm making spaghetti bolognese. I'm going to take a shortcut and use a can of tomato and basil pasta sauce, and I'm going to pour a glass of merlot in it and see how that goes.
Preheat oven to 180degC. Mix together egg and grated cheese.
Spread a thin layer of Vegemite over the bread slices (crusts on or off).
Spread the cheese mixture over the Vegemite and then cut each slice into three fingers.
Place on an oven tray and bake for 10 to 15 minutes until the bread is crisp and golden. Cool on a wire rack and store in an airtight container
You can probably mix it up a bit and add cut up strips of bacon or seasoning like chilli powder as well, if your that way inclined.

Put on a pot of ham and beans this morning. Going to serve them with corn bread, fried potatoes, a carrot cake for dessert.

I am thinking of doing a white pizza tomorrow, may even make a Swedish Africana pizza, which has ham, beef, chicken, banana, pineapple, onion and curry powder on it.
