I have a few suggestions to add into this idea...
1: Butchered meat should be best roasted on an iron spit. And thus, when roasted in this manner, should heal more life points plus give a temporary skill boost.
2: Besides the various types of common meat (Beef, chicken, rabbit meat, beast meat, bird meat, and so on), there should also be certain types of exotic meat (Such as pheasant, quail, duck, pork, and so on) and maybe a few delicacies (Like cat meat, dog meat, goblin meat, dragon meat, dwarf meat, and gnome meat).
3: Butchers should not only be able to cut meat but also should be able to drain the juices from it to prevent poison or disease from occurring while eating it.
4: A well-trained butcher could also season his or her meat using spice, gnome spice, certain herbs, or a combination of the above.
5: Can this butchered meat be sold to meat shops owned by NPC's or just to other players who want to eat food and gain a health and skill bonus?
6: I doubt a metal dragon would have any meat on his bones. But a non-metal dragon (Blue, black, red, and so on) definitely would and could be butchered.

I have a few additional types of meats which could be used in conjunction with butchery. In fact, some of these could tie in with the Hunter Skill...
1: Additional common meats could include...Venison (Deer meat), lamb chops, turkey meat, which could give a bonus when roasted/eaten on Thanksgiving, and possibly ruffled grouse and partridge.
2: Additional rare meats could include...Unicorn meat, snake meat, ogre meat, monkey meat, fox meat, wolf meat, strykewyrm meat, cyclops and/or giant meat, possibly zombie meat, possibly jackal and coyote meat, demon meat, and so on.
Some of these creatures can be killed normally (Demons, unicorns, ogres, and so on), but some of them cannot be killed at all (Pigs, lambs, and so on). These creatures could be added to the Hunter Skill. This holds true especially for the creatures which don't exist yet (Such as deer and quails).
And some of them can be killed or hunted. But if they are hunted, they could possibly drop more than just one slab of meat and their hide as well.

You asked one question:

I envisioned that there would be butchery shops located around Runescape where butchered or un-butchered meats (carcasses) could be bought or sold to NPC's just as with most other player made items.
