He could review your bank inventory and list for you all the quest related items that no longer have any future use. Like Keys, glass, books, passes, lists, maps etc.

Another option that could be added is the ability to list your items 'spreadsheet style' along with their current value. The list could be sortable by either item name or value and could be made either an ascending or descending list. At the bottom of the list it could add up all the values and show you a total value of your bank account.
