Favorite Quest? Why?:
Damn, this is a hard one. I've always said Missing, Presumed Death since it's literally a gateway to the Sixth age (well, after The World Wakes) and I loved all the references in the quest and the lore-content of the quest. However, I think The Light Within takes the crown at this point. God, I thoroughly enjoyed completing the quest on my main and I am very much looking forward to completing it again on this account.
One Small Favour is an amazing quest too, though. Honorable mention.

Elemental Workshop III, definitely. The horror! The horror! (yes, this is a Heart of Darkness-reference)

At the time of writing this application, 1715. I'm approaching 72 Prayer though, so by the time I finish this application, probably 1716.

I think my answer to this question has changed since I first filled out the application. I would rather walk a mile in another man's shoes, for you can only truly understand someone else's complications and problems once you have experienced them yourself.

Well, yes. Closing your eyes doesn't equal going blind. Just open your eyes and all your vision-related problems are solved!
Realistically, no. Philsophically, yes. There's more to philosophically seeing than just vision.
If you know what you do not know, do you know everything?:
Ignoring the near-infinite amount of knowledge in the universe, then yes, this does imply you know everything. However, I'm not sure. I'll be able to confirm/deny this once the premise of "knowing what I do not know" comes true.
