Knockanore smoked cheese yum yum.
I know a good vegetarian dish involving smoked cheddar or a smoked cheese.
You get a big portabello mushroom, you remove the stalk (but hang onto it) you fry the top till its golden brown then put aside.
Next you get a cooking apple (crab apple) cook it off with a little sugar till its soft and mushy, then you get your smoked cheddar and grate it, mixing it in with the apple concoction once its cooled.
You then put that into your mushroom and finish them off in the oven.
But before then if you want to make a nice sauce and use the mushroom stalks you needa make a mushroom stock, basically add the stalks to some water (you can bulk it with some cheap dried mushrooms if you want) and bring it up to a simmer slowly then leave for an hour or so (you shouldn't need to skim it as its not made from animals so not much fatty stuff appears).
After an hour or so remove the stalks and dried mushrooms if used any and then add some balsamic vinegar and port then leave it till it reduces and gets the consistencys of almost treacle.
When it comes time to server get some ciabatta bread, toast it for a couple of seconds then put your cooked filled mushroom top part down on a plate put the ciabatta bread on top and then flip it over and it will look like an imitation Burger =P Drizzle some of your port and balsamic vinegar sauce over it and you can have it either with a salad or matchstick fries.
FYI it sounds more complicated then it is all in all you only need to move around for about 10-20mins while cooking it and the port and balsamic reduction keeps for at least a year (alcohol and vinegar both preservatives) and goes well with normal burgers or with stake.
Making the mushroom stock yourself will take awhile though but you can always cheat and just use a stock cube if your lazy (but use a mushroom one obviously).
