Over the years, my clan has had 4 different members in charge of maintaining drop logs. The first drop log (on our forums) started when our clan was founded on April 1st 2013, but it was short-lived when the thread holder ragequit the clan and deleted everything about 2 months later. This drop log covered all bosses in the game at the time, and no one wanted to start a new one afterwards.
Our second drop log started July 7th 2014 when we decided to start tracking drops again, this time on a google spreadsheet rather than a forum post. We started fresh and originally only included drops from Vorago, Nex, Rise of the Six, Kalphite King, and Legiones. At the time, we thought including the others would be too excessive to keep track of because the values were so low that no one got excited over solo drops from GWD, for example. Ironically, hardly anyone in the clan was fighting the Corporeal Beast at the time, so we chose to exclude it as well.
On July 11th 2014, those in charge of maintaining the new doc all left our clan to form a new clan. They deleted everything that was on the sheet, but someone was able to retrieve the data from the edit history to start a new google doc.
On July 18th 2015, the holder of our third drop log left the clan, and I transferred everything to a new google doc to take over as the new drop log manager. This one is currently running with the data from the original doc onwards, and thankfully, nothing has been lost.

I'd like to know if any other PvM clans here maintain drop logs similar to this.
It's been a rather bumpy ride getting to this milestone for us, but we've not had any issues with our drop log's maintenance since the current one was made.
Just to address a few things though, this is how some parts of our drop log work:
We add drops reported from clan members, whether it be through discord, game chat or someone sees a broadcast, as the value reported it sold for unless no value is reported which adds it as the GE value.
More recently, we've started using RuneLogs to snag up drops that no one reports.
Drops from Araxxor only included full Spider Legs because no other uniques could be sold. Noxious weapons, made by receiving all four pieces as a drop, get added to our log as a Spider Leg with the selling price of the Nox.
Ascension Crossbows get added as the selling price of the bow, though keystones should have been included.

Yeah, everything is manual. We have a dedicated group who helps add drops. The main google doc is much more detailed, but I can't share that publicly. I made this doc awhile ago so other clan members could view the spreadsheet.
Automatic drop additions is an interesting idea. I've never used google scripts, so I'm not sure exactly how it works. But, there's also the cases with getting sell prices added that don't meet the GE value, so there would need to be manual updates regardless.
