my headcanon has been that Gielinor has an unusual abundance of easily accessible mineral wealth very close to the surface. Hell, there are still lots of outcroppings above the surface that are nowhere near depleted yet.

(and with the mining and smithing rework, they'll never deplete!)

The value of such materials is determined by the labor involved in extracting and producing it, and the scarcity too. On a planet like Gielinor, metals and precious minerals are going to naturally be cheap. You know how cheap gold is anyway, too.
