Why does Father Aereck offer desert pantheon gravestones if he is a Saradominist? Does he even offer any gravestones with Saradomin's symbol?

This is no matter of lore but gameplay.

Those gravestones were rewards from 2015s Halloween Event.

Father Aerecks gravestones are very simple as the money from their purchases goes to charity.

For more advanced gravestones you need to go to Keldagrim which includes other god theme gravestones as well. In War It Does Not Matter Who is Right, But who Is Left.

Ah yes, Hallowe'en 2015... one of the worst events ever... although the setting, narratively speaking, was quite interesting.
