in constantines time, half the legions followed mithras. bull imagery was important, as were other animals.
But you know the romans loved their bloodsports too, like the gladiator games and the zillions of animals they slaughtered in the arena. I'm sure the legions enjoyed gambling on which dogs would win or lose with the bulls.
as far as flavor goes, I'm betting they didn't notice the "tainted" meat. They drenched everything in garum, which is a pretty strong flavored fermented fish sauce.
