hunh. idk but bullbaiting outlawed since 1832 or so. bullbaiter stones still all over the UK. same law outlawed cat leather merkins and the root of that slang word everyone keeps using which actually means what it says.

...anyways. seems weird to me, but not impossible, that cow doesnt get gamey with adrenaline?

generally the cattle industry tries to keep the animals calm before the slaughter. (it doesn't always work) When cattle finally realize whats happening its too late, and don't have time to work up adrenaline and lactic acids. Dogs chasing a deer for 30 minutes produces a lot of unpleasant chemicals in the meat.

yeah that makes sense. I read a little on how to do halal or kosher butchery and its like what yer sayin. That bullbaiting seems real odd as counter narrative though. One factoid I know is that the ninth legion had been told they couldnt walk their bull baiters on the streets of rome anymore, so when they were late building the second wall and ordered to deci-mate and lose a tenth of their number, they mutinied, and get called "lost," but basically became the basis of the UK with all of their mithraist dog imagery and stuff.

the mithraist relief usually shows a scorpion nipping bull testes and dogs baiting it at the front. I do think its a visual metaphor for cookbooks and smokehouses making war cult BBQ, but... then they also bred pugnace into bulldogs and had the bullbaiting stones. Maybe that was more for gambling than eating.

in constantines time, half the legions followed mithras. bull imagery was important, as were other animals.
But you know the romans loved their bloodsports too, like the gladiator games and the zillions of animals they slaughtered in the arena. I'm sure the legions enjoyed gambling on which dogs would win or lose with the bulls.

as far as flavor goes, I'm betting they didn't notice the "tainted" meat. They drenched everything in garum, which is a pretty strong flavored fermented fish sauce.
