You have to keep in mind that EoC kind of destroyed every quest boss, and they haven't been back to balance them yet lol. You can kill Koschei the deathless, all 4 forms, with stats in the low 40's, and no food or potions. The final fight for RFD can be done without weapons, food or potions also.

Apart from the quests that were released after EoC, they aren't really a challenge combat wise anymore
