Well I like to keep the burger pattie simple. But you gotta use good quality beef mince. Then you put an egg in there, and some herbs and spices. Chop up some onion finely.

Then you put your hands in there and mix it up.

Cabbage Rolls (Slovenian variant) are my favorite food, but I am not sharing the secret family recipe. :P

What is " 93/7 ground beef"?

I would assume 93% meat and 7% fat.

Sounds like a marketing hype dupe.
We mince all our own beef - very quick and easy - never trust store bought mince as you never know how much fat has been added. The advantage is that we can add in the minceing, for instance, onion, garlic, peppers, smoked bacon, herbs etc.
The thing is 93/7, I would assume, means 7% 'added' fat, this does not take into account the amount of fat already in the beef.

Anyway - Rissoles - family recipe goes way back to 1920's - maybe beyond that.
Make balls of ground beef a little larger than an egg. roll in mixture of flour, salt, black pepper, oregano (any herb you like). Shallow fry to brown all sides, set aside.
The pan will have particles of burnt flour on the bottom - add a good dollop of Dijon Mustard and deglaze pan with a good glog of Red Wine - Beer - Cola (your choice) add Julienne Carrots, chopped onion and some tomato paste - Top up liquid with a little water if needed than add the meat balls.
sprinkle the top of each meat ball with a little ground OXO cube - cover and simmer for about 30 minutes.
Serve with mashed potato or sweet potato - goes well with mashed Swede also.

Your always going to get a certain amount of fat in your minced beef or any other minced meat, the idea that you wont is laughable. You actually want a certain amount of fat, it helps bind the mince together and we need fat in our diet.

The same goes with sausage meat.

@ToP BaSS I understand sausage meat has a lot of other ingredients including some of what you have posted.

I use minced beef in bolognese sauce to make either spaghetti bolognese or lasagne. I don't know how many calories it is but I think the lasagne recipe I use would be above 500. I was given the recipe by an Italian girl I used to work with. It has 3 different Italian cheeses and an egg in it, none of that sloppy white bechemel sauce
