Your always going to get a certain amount of fat in your minced beef or any other minced meat, the idea that you wont is laughable. You actually want a certain amount of fat, it helps bind the mince together and we need fat in our diet.
The same goes with sausage meat.
@ToP BaSS I understand sausage meat has a lot of other ingredients including some of what you have posted.
All sorts of crap can be put into sausage meat, it is also pulverized to a paste rather than having at least some recognisable meat such as minced meat.
Sausage usually have below 50% meat, of which can contain mechanically retrieved meat (ie bone scrapings, although they now usually use a powerful water jet) snout, ear, and other facial parts, a large portion is made up of fillers such as rusks, also added are sugars and nitrate and nitrite preservative. Not good but bloody tasty when you get a good-un lol
